Cool, Breezy, Easy Summer Salads…and Desserts…

This mornings segment on WHP CBS TV was all about cool and easy summer meals to make on days just like this one…HOT & HUMID!I had hoped to link you to one place for all of the recipes but…being the technological infant that I am…I’ve had a few glitches with the link. Please bear with me as I figure out how to get those to you in a nice tidy document!

In the meantime…you still need to eat, right? In light of that fact I’m posting a couple of the recipes here now….in the next few days check back and there will either be a working link for more recipes or…they will appear here a few at a time!

Our new favorite….Couscous (or other grains) Salad

I used one box of Near East Roasted Garlic Whole Grain Blends, prepared as directed on box…let cool.
Bake or grill a large chicken breast (that you’ve marinated in Gazebo Room Greek dressing), cool and cut up into chunks.
Combine the cooled chicken and grain mixture and add 1 can of garbanzo beans (chick peas) drained;
1/2 a can of medium black olives, halved; chopped green onion; cherry tomatoes, halved; Greek dressing, salt and pepper to taste.
Not only is this one quick and easy, it is quite tasty and very good for you!
Even Prince Charming likes it…and he’s pretty picky!
Dessert…..you may want to eat this first!
Strawberry Angel Dessert……I’ve been enjoying this dessert for close to 30 years! It was introduced to me by “Adopted Mom”, Nancy!
You’ll need: 10 oz. (I use 16 oz.) pkg. of frozen strawberries, sliced, in sugar (thawed)
1 – 6 oz. box strawberry jello pinch of salt
2 TBS sugar 1 – 10″ angel food cake (torn into pieces)
1 pint whipping cream (whipped)
2 1/2 cups boiling water
Dissolve jello in 2 1/2 c. boiling water, stir in thawed berries, sugar & salt. Cool in fridge for 1 1/2 to 2 hours, until it begins to thicken. Then, fold in whipped cream, set aside. In the bottom of a
9 x 13 glass pan arrange 1/2 of the torn angel food cake. Onto that pour 1/2 of the berry mixture.
Arrange the rest of the angel cake on top of that and then pour remaining berry mixture on top.
Refrigerate overnight…and try not to eat it all at one sitting!!!!
