Spinach & Egg Casserole for an Easy & Elegant Christmas Brunch…….
As I mentioned in the previous post….we do a Christmas Morning Brunch now that my children are grown and out on their own. It is an Easy & Elegant way for us to fill our tummies before we open our gifts.
What makes this Easy is the fact that it can all be prepared ahead of time and then just popped in the oven to cook and heat up that morning. What makes the Christmas Morning Brunch Elegant is that I set it up as a pretty buffet (I’ll share some of my secrets with you in one of the next posts), I use pretty paper plates, real silver, cloth napkins and stemware
Today I’d like to share another of our favorite brunch recipes, it is just as yummie as the

Spinach Egg Bake
*4 bunches green onions, finely chopped *1/4 c. butter *1 lb. fresh spinach, trimmed
*6 TBS. parsley, finely chopped *12 eggs *1/2 c. sour cream *1/2 t. salt
*2 c. shredded cheddar cheese (I prefer Swiss cheese) *1/2 c. grated Parmesan cheese
Preheat oven to 350 degrees, In a large skillet, saute onions with butter for 2-3 minutes, until tender. Add spinach & parsley, saute 3 minutes more until heated through. Remove from hear & set aside.
In a large bowl, beat the eggs, sour cream & salt until smooth. Stir in spinach mixture & cheese. Pour into a greased 15×10 baking pan. Sprinkle w/Parmesan cheese.
Bake uncovered for 25-30 minutes or until knife inserted in center comes out clean. Cool for a few minutes and cut into squares.
