A Beehive, Teapot, Strawberries and a New Friend…
First, I’d like to share with you a couple of cakes I came across while searching for images for various projects I am working on.
The first is the most adorable Beehive Cake…isn’t it the cutest thing?!
Sur la Table offers the pan to create this Beehive Bundt Cake. Wouldn’t this be the talk of the party this summer?! Not difficult, but definitely a “WOW” factor!
And this lovely lavender Teapot Cake…..
Unfortunately I cannot remember exactly how I met her…it may have been from TT or she may have left a comment on a blog I left a comment on and I thought she looked interesting…something like that. Anyway…Pam over at Ramblings of a Happy Homemaker (note the word “HAPPY”) is a hoot and a wealth of information when it comes to eliminating chemical cleaners from your home and just life observations in general.
You really must pay her a visit…when I read her post An Update in Honor of Earth Day I found myself, for the very first time pertaining to this topic, saying to myself…hmmm, I need to try that! And a few days before when I read That’s My Story and I’m Sticking To It I laughed so hard my stomach hurt! It was so funny I had to read it to my Prince…and we both laughed til our stomachs hurt! 1 (3.4oz) pkg. coconut cream instant pudding mix
3/4 c. sour cream
1/4 c. heavy whipping cream
1 (8 oz.) pkg cream cheese, softened
3/4 c. confectioners sugar
1 t. coconut extract
1 qt. large strawberries, washed & dried
*In a small bowl, combine pudding mix, sour cream, and cream. Beat @ medium w/electric mixer until well combined.
*Reduce speed to low; add cream cheese, conf. sugar, and coconut extract, beating until well combined. Cover & refrigerate 30 minutes.
*With stem side down, make 2 vertical cuts from tip to 1/4 inch from stem end of strawberry. Gently spread apart to form four “petals”. Spoon or pipe coconut filling into each strawberry. (a cookie press works wonderfully for this) Garnish w/toasted coconut, if desired.
These can be made a day ahead and stored in refrigerator.
